Bring to medium heat and cook the pancetta until it starts to crisp, 4 to 5 minutes. Cook for a further 10–12 minutes (depending on the pasta’s cooking times). Add the broth ingredients. Let simmer. Fold in the spinach and toss gently, just until the greens start to wilt, about 1-2 minutes. Add the garlic, rosemary and bay and fry for a minute more. Bring to a rolling boil over high heat, then adjust the heat to a gentle boil. Drain if needed. Add Borlotti and Cannellini beans, then pasta, and the remaining vegetable stock. Simmer until the liquid reduces by about half, approximately 4 minutes. Carefully pour in the bean puree, whole beans, remaining chicken broth, and tomatoes, and then stir to combine.
